HOLIDAY RED RASPBERRY BARS

I have been making these holiday red raspberry bars for about 8 years now and they are always a hit. I usually make 3 pans and then I package them to give as gifts and of course, keep some for us since the boys and my husband LOVE them! Holiday Red Raspberry bars are really easy to make and taste amazing with the perfect combination of chocolate, raspberry and buttery crust.

2 1/2 cups all-purpose organic flour

3/4 cup organic sugar

3/4 cup finely chopped walnuts ( I put mine in the food processor for a few seconds)

1 egg beaten

1 cup (2 sticks) cold butter

1 jar (12 ounces) seedless red raspberry jam

1 2/3 cups of milk chocolate chips or semi-sweet chocolate chips

Heat oven to  350. Grease 13x9x2 inch baking pan ( I use glass)

Stir together flour, sugar, walnuts, and egg in large bowl

Cut in the butter with a pastry blender or fork until mixture resembles coarse crumbs. Set aside 1 1/2 cups crumb mixture.

Press remaining crumb mixture on bottom of prepared pan. Stir jam to soften and carefully spread over crumb mixture in pan. Sprinkle with chocolate chips. Spread reserved crumble mixture evenly over the top.

Bake for 40 – 45 minutes or until lightly browned. Cool completely on wire rack and then cut into bars.

The good news is cutting in the butter and cutting them into bars does burn several calories so you will be free to taste test!! 😜
